Zucchini Boat Pizza

1. Wash and clean Zucchini. Choose tender small size zucchini.


                               2. Cut Zucchini length wise.



                               3. Extract the pulp with the help of spoon.
                             

                           
                               4. Pre heat oven by 180 for 10 mins. Sprinkle salt on zucchini and bake for 15                                          mins. While baking is on boil half cup of broccoli. Do not over boil.  
                                   Cut carrot into small pieces.


                              5. Boil sprouted whole mung for 2 mins in boiling water.


                              6. Boil corn as well.


                               7. Take out baked zucchini.
                                   Do not over bake zucchini as we are going to bake it again with other                                                    ingredients. Sprinkle vegetarian cheese, black pepper and italian  herbs on it.




                               8. Fill zucchini boat with broccoli, corn,carrot, whole mung and paneer. Sprinkle
                                   little black pepper , oregano and vegetarian cheese on it.



                          9. Bake again for 15 mins. The delicious zucchini boat pizza are ready to offer.


                  10. Serve hot with green chataney and tomato sauce.

Zuchchini pumpkin Sabji


 Cut Zucchini lengthwise 


Cut pumpkin and capsicum lengthwise 



 Heat 1 tbsp of oil in pan , add Jeera, curry leaves, ginger paste and green chilies. Fry for 1 min.


Add all vegetables and mix well.




 Cover the pan and cook for 3 mins until vegetables are tender but not over cooked. keep the pan open and cook for 3 mins on high flame. Add Salt in it. Serve with hot Roti or Rice. Garnish with fresh coriander leaves.
